Who doesn't love the simplicity of this almond snack mix? Not only is it an easy appetizer recipe, but it's just as easy to eat - so make more than you'll think you'll need!
What you'll need:
- 1 17-oz box of Rice Chex cereal

2 3/4 cups of almonds (sliced)

1 cup of granulated sugar

1 cup of light corn syrup
-
3/4 cups of butter (don't use any fake butter!)

1 teaspoon of almond extract
What to do:
Mix the rice cereal and almonds together in a large bowl and set aside.
In a heavy saucepan, combine the following ingredients: sugar, corn syrup and butter. Bring the sugar mixture to a boil over medium heat, stirring occasionally. Check the temperature with a candy thermometer until it reads 250 degrees F (hard ball stage). Remove the mixture from the heat; stir in the extract.
Pour over the cereal mix and mix well. Spread onto wax paper-lined baking sheets; cool. Toss to break apart. Store in an airtight container.
