Wow! Apple Cinnamon Snack Mix is GREAT! It's a little more involved than other snack mixes, but the extra effort is well worth it. You can substitute the Apple Cinnamon flavor "O-type" cereal with any kind, but this flavor really lends itself to using it for holiday parties - like Halloween for instance.
What you'll need:
- 6 cups "O-type" cereal (apple cinnamon or other flavor)
- 1 1/2 cups raisins
- 1 cup peanuts (or substitute almonds)
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon ground cinnamon
- salt (to taste)
- 1/2 teaspoon baking soda
What to do:
First, preheat the oven to 250 degrees F.
Then, grease a large-size baking sheet. In a large bowl, mix together the cereal, raisins, and peanuts. Next, in a small saucepan, melt the butter over medium heat and add the brown sugar, corn syrup, cinnamon, and the salt. Stir frequently, and bring the mixture to a boil.
Boil for about 5 minutes, then stir in the baking soda, and immediately pour over the cereal mixture. Toss to coat - make sure you take care with the hot butter - it can burn. Spread the mixture out on one layer on the baking sheet and bake for 15 minutes. Serve warm or cool and then store the rest in a tightly sealed container. So yummy!
For a variation, substitute different kinds of nuts or cereal. You can use dried cranberries instead of raisons and even add it cut up pieces of dried apple for a more "apple-y" flavor. Enjoy!
