Bloody Mary Soup Appetizer is a fantastic way to start out any New Year's Eve party. Not only is it delicious to sip on, but it's super easy to make. What you'll need for the soup:
- 1 can of vegetable or chicken broth
- 1 28-ounce can of plum tomatoes
- 1 celery stalk (diced)
- 2 teaspoon of Worcestershire sauce
- 2 teaspoons of hot pepper sauce
- 1/4 teaspoon of salt
- 1/2 cup of vodka
What you'll need for the Horseradish cream:
- 1/2 cup of sour cream
- 1 Tbsp. of horseradish
First, combine the first six ingredients into a large saucepan and bring the mixture to a boil. Then, reduce the heat and let it simmer for about 2 minutes.
Next, transport the newly mixed soup to a blender or food processor and purée the mixture until smooth (you will have to do this in 2 batches.) Return the puréed soup to the saucepan and stir in the vodka. Simmer for about 2 minutes.
While you are letting it simmer, combine the sour cream and horseradish to make the horseradish cream.
Serve your Bloody Mary Soup in festive soup bowls or mugs and top with a small dollop of the cream you just made and a leafy stalk of celery.
Here's a tip: You can make this soup a day ahead and serve either warm for those cold winter nights, or chilled as a refreshing appetizer for the days when you don't want something hot to drink.
