Chile Sauce with Pizzazz!

There's chili sauce and then there's Chile Sauce. Try this wonderfully, tart and hot dipping sauce for fondue next time you serve Meat Fondue or Seafood Fondue.

This homemade version of this sauce beats the store-bought version hands down!







What you'll need:
- 3/4 cup chile sauce (bottled or see recipe below)
- 1/2 cup chopped onion
- 3 Tbsp lemon juice (freshly squeezed or bottled)
- 2 Tbsp salad oil (canola or vegetable)
- 2 tsp tarragon vinegar
- 1 clove garlic (mashed)
- 1 tsp brown sugar
- 1/2 tsp hot pepper sauce (Tobasco or equivalent)
- 1/4 tsp dry mustard
- 1/4 tsp salt

So easy to do, just stir all ingredients together in a small sauce pan. Bring the mixture to a boil and then simmer gently for 5 minutes or so.

Serve hot with your Fondue dinner, or make it ahead and allow to reach room temperature before serving.

This recipe makes approximately 1 1/4 cup.

What about making your own sauce from whole chiles? Here's an interesting idea and recipe in case you want to take making your own chile dipping sauce one step further:

First, take 10 dried red New Mexican chiles and arrange on a baking pan and place in the oven at 200 degrees F for 5 minutes until the chiles start to smell like they are roasting. Don't burn them as you would when you generally roast peppers.

Then, remove the stems and seeds. Sauté 1 medium onion and 2 cloves of chopped garlic and blend with the chiles and one cup of water to puree it to a smooth sauce. Put the puree in a sauce pot and add 2 more cups of water.

Next, bring to a boil, reduce the heat to a simmer and simmer for an hour. Use this chile sauce in place of the store-bought version when making the above recipe. Delicious!
