Cold Bearnaise Sauce

This cold bearnaise sauce is so easy to make. And it tastes wonderful. It's delicious with meat, chicken and seafood fondue. The best part is, it doesn't have to be heated to be served as the name implies.

What you'll need:
- 3 egg yolks
- 2 Tbsp tarragon vinegar
- 2 Tbsp lemon juice
- 1/4 tsp salt
- 2 tsp prepared mustard
- 2 medium-sized sprigs of parsley
- 1/4 tsp tarragon
- 3/4 cup butter
- 1/4 cup water

Combine the egg yolk, tarragon vinegar, lemon juice, salt, mustard, parsley, and tarragon in a blender or food processor. Blend until smooth.

Melt the butter witht the water until bubbly. Then, with the blender on high, pour in the hot butter mixture in a steady stream. The sauce will thicken when chilled.

This recipe makes about 1 1/2 cups.
