Dill Sauce for Fondue

Dill sauce is such a flavorful way of eating your seafood fondue. Making this sauce is not only easy, but it's so delicious that you'll have to make more than you think you'll need. Watch it disappear right before your very eyes. Your guests will beg you for the recipe.

What you'll need:
- 2/3 cup bottled clam juice
- 1/2 cup dry white wine
- 1 1/4 cups crème fraîche or whipping cream
- 3 Tbsp minced fresh dill
- salt and pepper to taste

All you do is combine the clam juice and wine in a heavy small non-aluminum saucepan. Bring to a boil and then cook until the mixture is reduced to 1/3 cup, (takes about 9 minutes).

Reduce heat to medium. Then whisk in the crème fraîche. Bring to a boil again and cook until reduced to 1 cup, (takes about 5 minutes). Remove from heat. Stir in the dill. Season with salt and pepper. Deeelish!
