Garlic Cheese Fondue
Browsing through some of my old magazines, I came across a recipe for Garlic Cheese Fondue that reminded me of a recipe my Dad used to love. I dug it up and couldn't resist adding it to my collection of cheese fondue recipes. Give it a try. It's mouthwatering just to read the ingredients!What you'll need: - 1 lb. Swiss cheese (grated) - 1/2 Gruyere cheese (grated) - 3 Tablespoon all purpose flour - 1 tsp ground nutmeg - 1/2 tsp ground white pepper - 1 1/4 cups dry white wine (approximate measurement) - 3 large garlic cloves (minced) - 1 crusty French bread or sourdough loaf, cut into 1 1/2 inch cubes First, combine both the cheeses, flour, nutmeg, and white pepper in large bowl and toss to evenly coat the cheese. In the meantime, bring 1 cup wine and garlic to simmer in a large saucepan over low heat. Next, add the cheese mixture a little at a time by handfuls, and whisking it until all is melted and smooth after each addition. The trick to making this work is to mix in more wine by tablespoonfuls to reach the desired consistancy. Then, transfer to your fondue pot. Set the fondue over a candle or canned heat. Serve your yummy garlic cheese fondue with the bread. This recipe makes 8-10 servings and can be used for an appetizer or a meal!
