Pistou Sauce

Pistou sauce, or more commonly known as simply pistou, is the French version of the pesto that Italians make. It's really good with pasta, chicken, vegetables, fish and certain soup dishes.

Here's how to make it and a couple of recipes below with which you can use it.

What You'll Need:
- 2 tomatoes (peeled and seeded)
- 2 garlic cloves (peeled)
- 1/2 cup extra virgin olive oil
- salt to taste
- 1 cup of basil leaves (packed
- 1/3 cup of freshly grated Parmesan cheese

First, peel and seed the tomatoes, peel the garlic and grate the cheese. Set aside.

Next, combine the garlic, oil and some salt in a food processor and mix until the garlic looks finely chopped.

Add the basil and peeled tomatoes and process until smooth.

Gently, pulse in the cheese and taste it for seasoning.

Use with Cheese Terrine or as a dipping sauce for Fondue.
