Yummy Potato Salad
Doesn't potato salad just conjure up great memories of summertime? Well, you don't have to wait until the summer to try this delicious recipe. This salad comes in all kinds of flavors, but this particular recipe reminds me of the kind my Dad used to make every summer. What you'll need: - 5 pounds red potatoes - 6 eggs - 2 cup mayonnaise - 1 onion (diced) - 2 green onions (thinly sliced) - 1 small green bell pepper (seeded and diced) - 3 stalks celery (thinly sliced) - 2 teaspoon salt - 1 teaspoon ground black pepper This easy appetizer recipe is a great one to make the day before. Doing so helps the flavors to blend and the salad to taste even better. All you need to do is first, bring a large pot of water to a boil. Add the potatoes, and cook for 15 to 20 minutes or until tender but still firm.* Drain, cool and cut the potatoes into cubes. Next, place the eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let the eggs stand in hot water for 10 to 12 minutes. Remove them from the hot water, cool, peel and chop. In a large bowl, combine the chopped potatoes and eggs. Mix together the mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight. *Some people like to make their salad with the skins left on the potatoes. Its very good that way and good for you too.
