Roasted Pumpkin Seeds

I love Roasted Pumpkin Seeds! And especially when I make them myself. They are too easy not to make!

Yes, you can buy them in the store, but somehow, they never taste as good to me as when I make them myself. So, here is my recipe.

You'll be amazed at how this fun Halloween treat not only tastes great, but is good for you too.

What you'll need:
1 freshly scooped out pumpkin
1 Tbsp. of butter (melted)
Garlic salt to taste

1. Once you've scooped out all the pulp from the pumpkin, separate the seeds as much as possible from the pulp. Rinse the seeds in a colander to remove any fibers left.

2. Spread out the seeds on a cookie sheet in a single layer and let dry for 24 hours. Drying the seeds helps the roasting and the butter will adhere to the seeds much better.

3. Pre-heat your oven to 300 degrees F.

4. Pick through the dried seeds to finally remove any remaining pulp. By this time any remaining pulp will separate from the seeds nicely.

5. Put your seeds and melted butter in a bowl and mix thoroughly. Sprinkle with the Garlic salt. Then lay out the seeds again on your cookie sheet in a single layer.

6. Roast the seeds, turning once in awhile for 45 minutes or until crunchy and golden brown in color.

7. Remove from the heat and let cool for 5 minutes before eating.

Enjoy! These yummy pumpkin seeds are also great sprinkled on salads.
