Spicy Grilled Shrimp

Spicy grilled shrimp is a real party pleaser. Next time you have a BBQ, try this easy appetizer recipe. You will probably need to make more than you think, because it's such a popular and tasty treat. Serve it with some great sauces - I've given you a couple of ideas below, but use your imagination. It's hard to go wrong with this easy appetizer recipe and the shrimp will disappear right before your eyes!

What you'll need for Spicy Grilled Shrimp:
- 4 cups water
- 2 Tablespoon coarse or kosher salt
- 2 Tablespoon sugar
- 1 Tablespoon red pepper flakes (crushed)
- 3 cloves garlic (sliced)
- 1 teaspoon paprika
- 30 shrimp (uncooked, deveined, peeled)*
- 1/3 cup seafood cocktail sauce
- 1/3 cup honey mustard dressing
- 1/3 cup spicy hot peanut sauce

What to do:
First, in a 2-quart saucepan, heat 1 cup of the water to boiling. Add the salt, sugar, red pepper flakes, garlic and paperika. Then, stir it to make sure the salt dissolves.

Once dissolved, remove the mixture from the heat and add the remaining 3 cups of cold water. You've just made the brine for the shrimp!

Place the shrimp in a large resealable food-storage plastic bag. Pour the brine mixture over the shrimp. When sealing the bag, push the excess air out. To prevent any kind of leaking, place the sealed bag in a plastic container or dish and refrigerate it for at least one hour.

Next, heat your grill. Remove the shrimp from the brine and discard the brine mixture. Thread the shrimp on 6 (12-inch) metal skewers, leaving about 1/4 inch space between each.

Place the skewered shrimp on your grill and cover it. You will need to cook the shrimp over medium heat for about 5 or 6 minutes. Turn the shrimp once and make sure it has cooked through until it turns pink. But don't overcook!

Place your sauces in 3 different bowls and arrange on a fun platter. Add the shrimp to the platter, but first remove from the skewers.

You've now created your own magic trick! Watch your spicy grilled shrimp disappear into thin air!

This recipe makes enough for 10 servings. (3 shrimp per person and about 1/2 Tablespoon of each sauce per person.) Delicious!

*The amount of shrimp can also be determined by how much it weighs. 30 shrimp or about 1 1/4 pound)

Cooking tips: To broil the shrimp, set your oven to broil. Place the shrimp on a rack in a broiler pan. Broil with tops 6 inches from the heat source for 6 to 8 minutes turning once and until the shrimp turns pink.
