Sundried Tomato Chevre Spread

If you love goat cheese, you'll love Sundried Tomato Chevre Spread. Not only is it delicious, but it's low-fat too!

It's an easy appetizer recipe that you can make ahead and pull out when you're ready to serve.

The creamy texture of the chevre goat cheese mixed with the tart flavor of sundried tomatoes is definitely a winning combination.



What you'll need
- 1/3 cup sundried tomatoes (not packed in oil)
- 4 ounces soft goat cheese (chevre)
- 1/2 8-ounce packaged of reduced-fat cream cheese (Neufchatel)
- 1/4 cup snipped fresh basil or 2 teaspoons dried basil (crushed)
- 3 cloves garlic (minced)
- 1/8 teaspoon black pepper
- 1 to 2 tablespoons fat-free milk
- 10 slices party rye bread or 20 assorted reduced-fat crackers- Assorted garnishes, cherry tomatoes, broccoli flowerets, bell pepper, etc.

First thing to do is put the sundried tomatoes in a small bowl and cover with boiling water. Let the tomatoes stand for about 10 minutes. Drain and discard the liquid. Chop of the tomatoes as finely as possible.

Next stir the chopped tomatoes, goat cheese, cream cheese, basil, garlic and black pepper. Stir in enough milk to make the mixture creamy and spreadable.

Cover and chill for 2 to 4 hours (you can make it the day before, too, if you prefer). And serve with the rye bread or crackers. The garnishes are used to top the spreaded crackers. Yummy!

This recipe for makes 1 1/4 cup of spread and about 10 appetizer servings.
