Tex Mex Soup

This Tex Mex Soup made with black beans, is so delicious and such a simple recipe too. I love this spicy soup!

The black beans really fill you up and if you serve it with a simple green salad, you've got yourself a meal! Or, serving small "taster" portions makes it wonderful as an appetizer too.

If you happen to be following a low fat diet, this easy appetizer recipe would be a great solution.



What you'll need:
- 2 14-ounce cans fat-free chicken or vegetable broth
- 1 cup onions (chopped)
- 3 15-ounce cans fat-free black beans (drained)
- 1 tablespoon plus 2 teaspoons of cumin
- 1 teaspoon Tobasco sauce or favorite hot sauce
- 1/4 teaspoon cayenne pepper
- 1/4 cup fat-free sour cream
- 3 tablespoons cilantro (chopped)
- 2 tablespoons lime juice (fresh is preferred)
- salt and ground black pepper (to taste)
- salsa (for garnish)

All you need to do is bring 1 cup of the broth to a boil in a medium saucepan over medium-high heat. Then, add the onions and cook in the broth for about 6 minutes.

Next, add the beans, the remaining broth, cumin, hot sauce, and cayenne pepper. Simmer the mixture for 5 minutes. Then, transfer to a food processor.

Process the mixture for approximately 30 seconds and add the sour cream and pulse until it is mixed in.

Season it with the salt and pepper. Add the cilantro and lime juice, stirring well. Serve it up hot with a small dollop of the salsa. And there you have it! How easy is that?

You can also serve it with Baked Tortilla Chips, Corn Tortilla Chips, and fresh Flour Tortilla Chips. All can be homemade if you are in the mood and taste delicious!
