Mexican White Cheese Dip
White Cheese Dip is made with Asadero cheese and in the Mexican community, sometimes referred to as Oaxaca Cheese. Oaxaca cheese originated in the Oaxaca region of Mexico and is made from cow's milk.What makes this white cheese dip so delicious? Well, Asadero cheese is a good melting cheese that retains its shape, becoming soft and stringy when baked, roasted or grilled. The taste mellows with heating and brings out the richness of it's flavor - similar to Provolone. It's flavor can range from mild to sweet and have buttery overtones. Asadero comes from the state it was named for in Mexico. It has a bit more tang than the mild Queso Quesadilla. What you'll need: - 2 cups Asadero (shredded) - 2 or 3 fresh jalapenos (chopped) - 1/2 cup Half and half cream - 1/3 cup onion (finely chopped) - 1 teaspoon cumin (ground) - salt to taste All you need to do for this easy appetizer reciipe is heat all the ingredients over low heat, stirring constantly, until the cheese is melted. NOTE: to melt cheese uniformly, use a double boiler or melt over a pot of water. This keeps the cheese from heating too quickly and separating. Serve warm with Baked Tortilla Chips, Corn Tortilla Chips or Flour Tortilla Chips. This recipe makes about 2 cups, so you might want to make more than you think you'll need - especially for a hungry crowd!
